Banana Bundt Cake

2 cups mashed bananas
4 large eggs
2/3 cup canola oil
2 cups flour
2 cups granulated white sugar
1 (3.5 oz) box vanilla instant pudding mix
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup unsweetened shredded coconut (I omitted)
1/2 cup dark chocolate chips
Combined mashed bananas, eggs, and oil in a large bowl.
In a different large bowl, combine the flour, sugar, pudding mix, baking soda
and salt. Add the dry ingredients to the bowl with wet ingredients and combine.
Fold in shredded coconut and chocolate
chips. Pour into greased and floured bundt pan. Bake at 325 degrees Fahrenheit
for 1 hour. Cool and cut into slices.
